A bright spot in the February gloom is the appearance of blood oranges in the produce sections of stores. Sometimes they are lightly red in spots and other times you strike it lucky and find a blood orange that really is the appropriate color. The extra acidity and tartness of these oranges screams salad! Again, the best organic mesclun mix comes from our Takoma Park farm market. This salad with its bright flavors provides the perfect contrast to the unctuous echos of the rabbit course.
Blood Orange Cranberry Salad
4-6 C fresh organic mesculn mix
1 blood orange, peeled and cut into pie shaped slices
1 avocado, cut into half moon slices
1/2 – 3/4 C large dried cranberries
Dressing
1/3 C extra virgin olive oil
2 T orange Muscat champagne vinegar
1 tsp mustard au champagne
1/2 tsp sea salt
freshly ground black pepper to taste
Arrange greens in a serving bowl. Distribute the rest of the ingredients artistically on top. In a separate bowl place dressing ingredients and whisk to emulsify. Allow to rest for 20 minutes to combine flavors. Present salad to the diners and re-whisk dressing and toss at the table.
